meso is a gastronomy inspired by the spirit of “Modern Australia,”
a cuisine born from crossing borders and blending cultures.
Rooted in French techniques, we weave together fermentation, spices, and Japanese dashi with a distinctly Japanese sensibility.
When the five basic tastes—sweetness, acidity, saltiness, bitterness, and umami—resonate with one another, they create not just flavors, but an experience that leaves space for memory and imagination.
